Lemon Maple Chicken Lettuce Wraps

Those quick and cheap drive through’s, the fancy over priced cafe’s you have so many lunch choices but you know they’re not working for you.
Sure, every once in a while,  treat yourself to a fancy farm to table type cafe or restaurant.  But, everyday, that starts cutting into the family vacation fund.
And those unhealthy fast food drive through’s, at every corner, can be avoided just by not needing to go there.

  • 1  large skillet

Ingredients
  

  • 2 tbsp coconut oil
  • 2 large chicken breastsboneless skinless, & cubed
  • 1 large leekchopped
  • 1 large carrotsliced
  • 2 large celerystalks chopped
  • 2 tbsp lemon juice
  • 1 tsp lemon zestgrated
  • 1 tsp maple syrup
  • to taste sea salt
  • to taste black pepperground
  • 4 large romaine lettuce leaves

Instructions
 

  • In a large skillet over medium heat, heat coconut oil. To the oil, add the first 8 ingredients (chicken through salt and pepper) and stir. Cook for 10 minutes, until chicken is no longer pink in the center.
  • Using a large slotted spoon, spoon the chicken mixture into the lettuce leaves and serve warm.
