Ingredients
  

  • 2 medium acorn squash halved and seeds scooped out
  • 1 pound ground additive free breakfast sausage
  • 1 tablespoon coconut oil
  • 1/2 medium onion chopped
  • 1 cup chopped cauliflower florets
  • 1/2 cup of dried cranberries soaked
  • 1 medium apple peeled and cubed
  • 1 tablespoon fresh chopped thyme
  • 1 tablespoon fresh chopped oregano
  • Sea salt and freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • In a large roasting pan, place the squash cut side up.
  • In a large bowl mix together the remaining ingredients (breakfast sausage through salt and pepper).
  • Stuff the squash with the mixture and place in the oven to cook for 35-40 minutes, or until the stuffing is cooked through and the squash are tender.
  • Remove from the oven and serve.
