  • 1 pound ground turkey
  • 2 tablespoons red curry paste
  • 4 cups low sodium chicken broth
  • 2 14 ounce cans pure pumpkin puree
  • 3 1/2 cups pureed steamed sweet potatoes
  • 1 14ounce can unsweetened coconut milk
  • Sea salt and freshly ground black pepper to taste
  • 1/2 cup toasted pumpkin seeds

Instructions
 

  • In a medium skillet, over medium high heat, add ground turkey.Cook turkey until brown.
  • In a large crock cooker, add the browned turkey and the next 6 ingredients; mix well.
  • Cover and cook on LOW for 5 hours or cook on HIGH for 2 1/2 hours, until soup flavors develop and condense.
