Taco Tuesdays give everyone an excuse to celebrate and be happy!

And when you’re trying to get back into the week’s routine of homework, work, after school activities, the gym and everything else you have to do, cooking a healthy dinner doesn’t sound like something you’d rather be doing.

Even if it’s the start of a new week of eating healthier, Tuesdays seem to like to derail us from your efforts with fun and tempting stuff like “Taco Tuesday” advertised everywhere.

So, here’s how you and your family can celebrate Taco Tuesday in a healthier way, so that everyone can be happy before, during and after your meal.

Happy Before Taco Tuesday

Before: Knowing exactly what’s for dinner leads to getting rid of that never-ending question from the kids, “What’s for dinner?!!!”

And it means less stress for you because you don’t have to wreck your brain over “What’s for dinner?”

Tuesdays are “Taco Tuesdays”.  Done!

You can certainly rotate a couple of your family favorite Taco recipes, but keep it simple.

Use taco recipes like this new one below and BBQ Tacos “To Go”, OR Taco Party Chicken Fajitas, OR Lemon Maple Chicken Lettuce Wraps, OR even Cauliflower Hummus Burritos (because tacos can be burritos and burritios can be tacos). 😉

Happiest During Taco Tuesday

During:  Taco Tuesdays are automatic celebrations.  Salud!!!

Just by saying, “It’s Taco Tuesday”, it brings a smile to your face and makes you want to break into a little salsa dancing.

Happy!  Happy! Cha cha cha!

Because eating healthier should always be celebrated!

No matter how small a baby step or how simple the salsa step you and your family take towards healthy… celebrate it!!!

Celebrating your accomplishments will fuel your family’s motivation to continue to eat healthier! Cha cha cha!!

Happier After Taco Tuesday

After:  The whole family will be happier after eating a healthy, filling and nourishing meal without the hyperactive side effects of kids who have eaten too many tortilla chips and not enough food so they are bouncing off the walls at “bed time” and saying they’re hungry at 8 o’clock at night.

And you’re SUPER HAPPY that your waistline didn’t get bloated and get on it’s way to growing bigger with “fattening” corn (just remember they feed cows and pigs corn to fatten them up) instead, you ate fat burning, tummy flattening taco’s like in this new recipe below.

The BONUS Happy thought on this new salmon taco recipe is that salmon actually helps reduce the risk of depression.

So, our families can eat salmon tacos and get happy at the same time!  Yippee!!!

To make this Taco Tuesday recipe even more fun… I used purple cabbage.

The purple color is bright and fun without brain-harming artificial colors and “cabbage has the highest amount of some of the most powerful antioxidants found in cruciferous vegetables”. – foodfacts.mercola.com

The red onions and garlic caramelized into a balsamic sauce is a naturally sweet topping on these tacos.

This was just the beginning of the caramelization process which brings out the naturally sweetest taste possible to the onions.

And this is the final deep caramelized color and sweet flavor on top of your healthy tacos.

This Happy and Healthy Taco that had my whole family laughing and talking over our Taco Tuesday Dinner.

A big reason why the whole family was happy is that Taco Tuesday recipes make it easy to set up buffet style and have everyone serve themselves.

And don’t we all feel happier when we are in control over serving ourselves delicious food??!!

I served this new Caramelized Balsamic Salmon Tacos recipe with leftover salmon from the night before and some cauliflower rice I pulled out of the freezer.

Instructions
  1. Preheat oven to 375 degrees.
  2. In a large baking dish, place the salmon. Season salmon with avocado oil, salt and pepper. Place salmon in the oven and bake for 20 minutes, until fish flakes easily with a fork.
  3. In a medium pot over medium heat, add the vinegar, red onion and garlic. Bring vinegar mixture to a boil and cook for 20 minutes, until it has thickened into a sauce.
  4. Place salmon on a bed of lettuce leaves, add some cabbage and drizzle sauce over the top. Serve warm.
