Autumn weather and Fall family festivities make all of us want to reach for a pumpkin spice latte, pumpkin donuts, pumpkin breads, and pumpkin everything!

But how do we do that without going overboard or missing out on all the fun?

Well, let me tell ya… this pumpkin spice apple combo along with the spices on the chicken makes this dinner taste like “Thanksgiving”!

The minute my family tasted it… the kids said, “Mom, you’re finally cooking like Pete’s Paleo!”

Pumpkin Spiced Chicken with Sauteed Apples

  1. In a large bowl, whisk together 2 tablespoons melted coconut oil, orange juice and zest, garlic, cumin, cinnamon, clove, and salt and pepper to taste. Add chicken to the bowl and toss well to coat.
  2. Heat a large skillet over medium-high heat. Add chicken to the pan and cook for 5-6 minutes each side until seared and cooked through. Remove from pan and set aside.
  3. Add the remaining coconut oil to the pan. Place the apples and pumpkin in the pan and cook 2-3 minutes until apples are tender. Serve chicken with apples and fresh greens.
