Summer Squash Time

Summer Squash can seem like the ONLY vegetable you can find in a sea of summer fruits.

The good thing about summer squash is that it’s a “light flavored” vegetable that takes on the flavors of the foods you cook it with.

So, your kids will eat it!

Summer Squash is inexpensive, “in season”, and when you use this soup recipe… it’s an easy and complete meal!

Make some, eat some, freeze some!

You’ll want to try this recipe even if it’s still hot where you live because summer squash is on sale “right now” and this can serve as a great “emergency dinner”.

Pull this soup out of your freezer when you need it, are in the mood for it, or on a busy back to school night!

Summer squash is not only hydrating but filled with fiber and vitamins.

When making soup, try stepping up the health benefits by using bone broth (see why here)..

Make homemade bone broth or I also keep Pacific Bone Broth in my pantry as “back-up”.

Summer Squash comes in lots of shapes and sizes.

This yellow squash that looks like the green zucchini is the most common.

I love getting these fresh at the Farmers Market, but I also found a convenient organic pack of both zucchini  and summer squash at Costco. (It’s that common 😉 )

Taking the time (I promise it doesn’t take that long) to caramelize the onions and the squash is the secret to this recipe.

Taking a few minutes to caramelize your food brings out its natural sweetness so you and your family will never miss eating sugar-free.

  1. Season chicken with salt and pepper and chili powder. In a large pot, bring 6 cups of chicken broth to a boil. To the boiling broth, add the seasoned chicken. Boil chicken for 10 minutes, (adding in the kale at 7 minutes) until chicken in white all the way through.
  2. In a large skillet, heat coconut oil over medium heat. To the skillet, add the next 5 ingredients (summer squash through garlic) and sauté for 5 to 10 minutes, until vegetables are caramelized. To the skillet, add the coconut aminos. Stir and turn heat down to low. Simmer for 5 minutes. Add in the chicken and veggies from the skillet to the pot, stir to combine. Serve warm.

Freeze extra soup in freezer safe mason jars or freezer bags.

You can even use some of this soup as fresh NEW leftovers!

Drink the broth.  It’s liquid gold that Bone broth!  (I gave it to the kids and they drank it because they liked the chicken and coconut aminos taste in it.)

Put the soup squash and chicken on top of fresh greens.

I used this julienne grater to make a fresh bed of zucchini.

Adding fresh and raw greens to leftovers saves you money and time in the kitchen, plus the raw greens help you boost your All-Day Energy! (I learned with from Yuri Elkhaim.  More info on it here).
