Cauliflower Hummus (Legume / Bean Free)

Hummus is great, it’s healthy but there’s only so much hummus dip one can eat before getting bored.  And technically, hummus is not Paleo because it’s made from a legume.

I am not the Paleo police, Healthy Family Meal Plans are Paleo-ish.  We use that as a standard like Whole30 to just get ourselves and families off processed foods and eating more “real” food.

Real food, like nature and God intended us to eat.  Real food that your body knows what to do with like to fuel your brain and body to make it work at it’s best for you.  All while you don’t feel weighed down, toxic or sick.

Health Benefits of Cauliflower

Did you know cauliflower has calcium?  So many breakfast burritos are loaded with cheese and you think, “well, that’s a good source of calcium”.

Cheese can leave you bloated and can be hard for some to digest.  Just listen to your body and do what’s best for you.  But remember, your body may not scream it’s in pain but you might see signs like constant runny nose, phlegm in throat, bloated belly and even weight loss resistance.   (like explained in my story).

Cauliflower also helps reduce inflammation and even helps detox your body.  Cauliflower helps with phase I and phase II of detoxification, which means your body detoxes and actually gets the toxins out of your body (like these top detoxing foods).

 

Healthy Gluten Free Breakfast Burrito

You and your family love breakfast burrito’s.  They are a fast and easy breakfast to make.  And your man feels like they are the hearty breakfast food that can fill him up.

But, the heavy, weighed down feeling after you eat a breakfast burrito is something you can do without!

Try making a fresh and flavorful Cauliflower Hummus and Chicken Burritos for breakfast?   It’s gluten free version of a breakfast burrito that your family will love.  Who would have ever thought of eating Cauliflower Hummus?!

Eating healthy breakfast filled with veggies leads to healthier choices all day long.  And curb’s your sweet tooth too.

Eating this burrito for breakfast is so perfect – it’s quick and easy to make – and it’s easy to eat it with your hands! It’s truly a healthy “fast-food” breakfast.

And don’t forget the cilantro on top.  Because Cilantro is one of the best foods to help you detox from heavy metals.  Think helping your kids detox from the everyday environmental toxins their little bodies are exposed to every day.

Cauliflower Hummus and Chicken Breakfast Burritos

Prep Time: 25 minutes                   Cook Time: 15 minutes                      Serves: 4

Ingredients:

  • 1 large head cauliflower ,cut into florets and steamed
  • Sea salt and freshly ground black pepper to taste
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin 1 tablespoon coconut oil
  • 2 cups chopped chicken breast
  • 4 large green leaf lettuce leaves
  • 1/4 cup chopped fresh cilantro

Instructions:

In a food processor, place the first 5 ingredients:

  • 1 large head cauliflower ,cut into florets and steamed

  • 1 teaspoon grated lemon zest – Using this microplane to zest is super easy and saves your fingers from getting scratched.

Sea salt and freshly ground black pepper to taste;

1/2 teaspoon garlic powder;

1/2 teaspoon ground cumin; and  1 tablespoon coconut oil

Pulse until smooth. – This is the food processor brand I’ve used for 16 years (at the time of this post)

In a medium skillet over medium heat, heat the oil. To the oil, add the chicken and sea salt and freshly ground black pepper to taste.

Cook for 10 minutes, until chicken is cooked through.

In the lettuce leaves, layer the hummus, chicken and cilantro.

Roll up the lettuce leaves and serve.

 

In the paper plate image above, the kid’s made their own breakfast burrito and said, “It looks like we get to add mashed potatoes to our tacos!”

In my head, I thought, no kid’s. “The mashed cauliflower is giving you a brain boost and giving you 77% of your daily recommended Vitamin C, even before you get to school today” 🙂
